Let your steaks sit at room temperature for 20 minutes before grilling.
Set a fire in your Evolve Kamado grill and allow it to reach a temperature of about 260°C.
Remove ceramic deflectors and place the cooking grid on the lower level for direct cooking (searing).
Oil your steak and apply your favorite seasoning.
Place steak on the cooking grid and close the lid.
You'll see the steak getting a nice sear after about two to three minutes. Flip them and close the lid again.
The temperature should be checked after two more minutes.
Take the steak off the grill once it reaches your preferred temperature (about 55-60°C for medium rare).
